Lamb "Meatballs"



Dinner last night included lamb "meatballs", asparagus, and garlic bread. I thought it was soooo good. For the meatballs I used a pound of ground lamb, green onions, garlic, feta, and some basil and salt too. I cooked them in the oven for 30 minutes on 350. I am loving trying some new recipes for dinner. Do you have a favorite recipe you'd like to share?

  1. those meatballs sound fantastic! a while before i left the US, i made some chicken and dumplings that were just delish! such a simple thing, but it's serious soul food for me!

  2. I discovered recently fresh basil and other Italian seasonings in Honduras. So, I have been making my special altered version of minestrone. Minestrone soup is vegetable soup in Italy. I add a small amount of ground beef, and I add tortellini when the pot is cooling. As far veggies, it depends on what is seasonally available. My favorite combination is tomatoes, green beans, chick peas, carrots, zucchini, onions and garlic. I make a big pot and freeze the leftoverws.
