Pancakes!

Delicious pancakes for breakfast this morning. I want to give a special thanks to Honduras Sprout for posting this recipe to her blog here. We loved them! Not only are they delicious, but I love that there is a lot of protein and not much flour.

We gobbled them all up! Here is the recipe:
6 eggs
1 c cottage cheese
1/2 c flour
1/4 t salt
3 T oil
1/4 c milk
1/4 t vanilla
I put all the ingredients into my food processor (blender also works), and blend until smooth. Enjoy!

  1. The cottage cheese part is interesting but that is SO great w/ how much protein it has them. Much better than the normal carb-loaded ones we all grew up on. Best thing is, I am actually not allergic to any of those ingredients. whoohoo! Maybe I will try them. Thanks for posting the recipee! You have the best natural recipees!! Keep them coming. :) We haven't tried the tortillas yet cuz I need to go buy some oil I am going to do it next week though. Have a great weekend. Blessings!

  3. I'm so glad I saw this recipe! We eat LOTS of pancakes in my house, I'm sure noone will mind if I make them healthier and still super tasty!
    have you tried adding bananas? Wondering if they would still taste good or too mushy?
    I'm savoring it with some homemade cajeta...yum!!!

    BTW-your daughter is preciosa!

  4. Ana, I don't know about adding bananas to this particular recipe, I think it already has so little flour that it might not work. I do like to make banana pancakes when my bananas start getting mushy though. You could always top them with some banana slices or berries!
